It is classic in all kitchens. This cream of vegetables offers great nutritional benefits and it is perfect for a light and healthy food.
Ingredients:
250g pumpkin
250g carrot
1 onion
1 garlic clove
Salt and pepper to taste
Paprika
50g of Kitu´s andean sweet potato mix
Preparation:
Cut the onion into pieces and add it into a pot with olive oil (You can add 1 tbsp of butter if you like). Leave it on fire under 5 minutes and then add pumpkin and carrot in pieces. Add salt, pepper and sweet paprika to taste. Remove all ingredients and let it cook 5 more minutes. As soon as vegetables start to brown, cover them with water or vegetable soup and leave it cooking at medium heat for 15 to 20 minutes or until vegetables be soft. Use the beater to mix until getting a soft cream. Before to serve crush the sweet potato mix and add to the cream.
* If you prefer, you can give it a different taste, then add 200ml of coconut milk or cream.
